Chicken Noodle Soup

chicken noodleA winter favourite that once again checks the boxes for being easy to make and easy to clean up after.

Everything gets done in one pot!

1 brown onions diced
2 cloves of garlic chopped or crushed
A dollop of olive oil

Fry those up until they are soft.

Add 4 chopped chicken thighs and brown them. Then turn up the heat.

Toss in a glass of white wine and a couple of teaspoons of chicken stock.

Peel and chop a couple of large carrots and toss those into the pot too.

Add about 2 cups of water and bring to the boil.

Add a packet of spaghetti or whatever family favourite pasta variety is best for you.

Allow that to cook for 15 minutes.

Finally add a cup of frozen peas and you’re ready to serve.

The peas seem to take the edge of the burning heat of the soup and make dinner edible by the small people instantly which is usually how quickly my little people want to get stuck in…and there isn’t even any bacon!
