A staple in our household. I guess you could call it poor mans spaghetti bolognaise. Whatever you want to call it, it is ridiculously easy although does need a bit of simmering time and my kids love it. It is my go to, I-can’t-be-bothered-cooking-dinner dinner.
1 large onion, chopped
2 cloves of garlic, crushed
2 TBSP Olive Oil
8 slices of middle back bacon, chopped
2 zucchini’s, grated
1 can of diced tomatoes
1 glass of wine
Fresh parsley and parmesan to garnish – optional
Fry the onion and garlic in the olive oil until softened, then add the bacon and fry until it is cooked through.
Turn up the heat, add the wine and let it sizzle for a few minutes.
Then add the zucchini’s and the tomato. Once it’s boiling turn it down and let it simmer gently for at least and hour or until the tomato has turned from bright red to a deeper almost purple.
Make up some spaghetti to packet instructions and serve the sauce over the pasta.
Garnish to your families taste.
It doesn’t really look like much but it is tasty and usually gets the bowls licked clean here.
